Did you know that one of the most important Calabrian delicacies is the sweet red onion from Tropea (Cipolla Rossa di Tropea IGP)? Grown in the provinces of Cosenza and Vibo Valentia, the Tropea onion has a mild, pleasant taste, which makes it a perfect choice for summer salads.  In Calabria it is also used to produce a delicious onion marmalade and other local products.

We often prepare red onions roasted, and eat them with fresh fish and spicy peperoncino! On today’s recipe the onion is caramelized gently before going to the oven to give it that extra bit of goodness.

WHAT YOU NEED

4 medium sized red onions
generous amount of  Verde Vivace Extra Virgin Olive Oil
salt
pepper
fresh herbs (Thyme, Rosemary, Sage)

1. Peel the onions. Cut them in half or in wedges.
2. Use a pan that’s oven-safe. Sautè the onions in olive oil for about 5 minutes.
3. Add salt, pepper and herbs, and just a little bit more olive oil.
4. Roast the onions in the oven at 190°C/ 375°F for 30 min
