Aioli is not just fancy mayo, it’s a sauce that has its own particular character! In this recipe we present only a base for the aioli, and we challenge you to make it your own by adding things that you like. The most important thing is to use quality ingredients, like really good extra virgin olive oil (*ahem* check our shop). Use aioli as a dip for grilled or roasted vegetables and as a spread for sandwiches.
WHAT YOU NEED:
1 clove garlic, crushed or minced
1 tbs lemon juice
½ cup/210 g Verde Vivace Extra Virgin Olive Oil
1. Whisk together egg, garlic and lemon juice.
2. Continuing to whisk, start adding the oil veeery veeery slowly, until you see it incorporate with the egg mixture. Then you can start picking up the speed, but don’t dump the rest of the oil at once.
3. Mix until the texture is nice and creamy. Season with salt and pepper, or the spices of your choice. If the aioli is too thick for your liking, add a bit more lemon juice.
