This is a simple foundation of a vinaigrette (which is just a fancy word for salad dressing)  that you can modify with spices or herbs you like. You can skip the garlic if it’s too much, or you can add two cloves if you love it! The easiest way of making the vinaigrette is to put all the ingredients in a small jar and shake shake shake! Use it generously, you can always make a new batch easily.


1/2 cup/ 115 g lemon juice
2 cloves garlic
2 tsp mustard
2/3 cup /160 g Verde Vivace Extra Virgin Olive Oil
1 tsp honey

Mix ingredients vigorously.  Stores in fridge for 7-10 days.

TIP! Add herbs of your choice to the mix! Or play it up with balsamic vinegar, red wine vinegar or white wine vinegar to make a few variations.
