If you want to eat lots of vegetables in one setting, go for some veggie patties. Or meatballs! Or make a meatload, no, a veggieloaf! This recipe you can do with or without lentils, using your favourite vegetables.

WHAT YOU NEED:

200 g cooked lentils
2 small sweet potatoes/1 medium (about 250-300g)
2 carrots
1 onion (or 2-3 spring onions)
2 eggs
30 g grated parmesan
40 g panko or breadcrumbs
salt, pepper
herbs and other spices of your liking

1. Grate the sweet potatoes and carrots, finely chop the onion and the garlic, add lentils and mix them together.

2. Add salt and pepper (and other spices), cheese, breadcrumbs and the eggs, stir until everything is well combined. If the mixture seems too loose, add a bit more breadcrumbs.

3. Form patties (or balls, if you prefer!) and either cook them on the skillet in some extra virgin olive oil for 5-6 min each side, or in the oven in 200°C / 392°F for about 30 min.
